Catering

Our stellar chef caters for all tastes and occasions. The Enterprise is a fully licensed charter boat supplying a fine selection of quality Australian wines. Special dietary requirements can be accommodated.
Following is a sample menu with a variety of Enterprise's gourmet taste sensations:

On Arrival

  • Almond frangipane, served w/ champagne or coffee/tea.

Canapes

  • Fresh shucked oysters served natural or w/ Atlantic salmon caviar.
  • Thai sticky rice cubes topped w/ tiger prawn, cucumber, tomato and a lemongrass and coriander mayo.
  • Spanish potato tortia topped w/ green chili aoli and capsicum jam.
  • Sesame toasted croutons topped w/ goat's cheese, guacamole, grilled chicken and tomato relish.

Entrees

  • Lobster and green mango salad w/ witloof, toasted macadamias and chilli jam.
  • Atlantic Salmon carpaccio, sprinkled with parsley, chili, pepper and garlic and drizzled w/ soy and turmeric oil served w/ grilled foccacia.
  • Seared peppered rare beef fillet, sliced and tossed w/ crisp vegetables and herbs w/ a lime, palm sugar and chilli dressing.
  • Coral trout ceviche on a tomato, onion and avocado bruschetta.
  • Goats cheese and caramelised onion tartlet on a bed of rocket, parmesan and watercress and drizzled w/ a balsamic vinaigrette and crisp fried capers.
  • Moreton Bay Bugs, pan seared w/ fresh lime and served on a celeriac and caper salad.

Main

  • BBQ Lamb loin, marinated w/ fresh thyme and garlic, cooked medium rare and served on a warm potato, parmesan and egg salad.
  • Panfried coral trout fillets w/ a sesame, mango & tomato salsa and lime mayo.
  • BBQ whole Spatchcock marinated w/ preserved lemon, rosemary, capers, garlic and virgin olive oil, w/ a mint, yoghurt dressing.
  • Panfried barramundi fillet w/ a thick salsa verde mayo.
  • BBQ beef fillet cooked medium rare w/ thick pesto mayo and onion and green peppercorn jam.
  • Seafood platter of Oysters, Moreton bay bugs, tiger/endeavour prawns, smoked salmon, mud crab and fresh sashimi of the day.

Salads

  • Tomato, Basil and seared onion salad w/ balsamic vinegar and virgin olive oil dressing.
  • Mesclun rocket salad w/ goat's cheese, mandarin, toasted almonds and a citrus and cumin dressing.
  • Kippfler potato salad w/ crisp pancetta, chives and a sour cream, seeded mustard, honey and red wine vinegar dressing.
  • Mesclun Salad w/ fresh herbs and a classic vinaigrette.
  • Rocket, radicchio and Parmesan salad

Dessert

  • Chocolate gateau with raspberry coulis and double cream.
  • Tangy lime tart w/ fresh double cream.
  • Crisp vacherin filled w/ mixed seasonal berries and chantilly cream.
  • Flourless orange and almond torte w/ double cream and fresh macerated berries.
  • Minted chocolate and frangelico mousse w/ crispy almond biscotti.
  • Cheeses - triple cream brie and blue castello w/ seasonal fresh fruit of the moment. Served w/ quince paste and crackers.
